I made this last night for my bunko app. Sliced breaded and baked zucchini. With a canalized homemade onion dip.
Slice the zucchini and salt it.
Let it drain for an hr.
While its draining make up the dip.
- 1 sweet onion caramelized
- 1 tbsp mustard
- 2 tbsp honey
- 2 tbsp red wine vinegar
Blend in a food processor or blender.
Then add 1 cup of mayo.
Then mix up the batter ~
Use Panko bread crumbs and freshly graded parmesan cheese and any Italian seasoning.
Dip the zucchini in egg then roll in the bread crumbs. Bake on 350 until brown. It turned out great!
